2 fresh PEI trout, from Cardigan Fish Hatchery
Kitchen Party Seafood Rubs, any flavour*
Fillet the PEI trout, removing all bones and
leaving skin on. Preheat grill to 200EC (400E F). Turn off burner on one side for indirect grilling. Sprinkle Kitchen Party Seafood Rub
generously on fillets. Place fillets, skin side down, in lightly oiled grill basket or directly on oiled barbecue grill, on side with burner turned
off. Close lid. Grill for about 12 minutes, until fillet is opaque and flakes easily. Timing depends on thickness of fillets. Do not turn
